1. Singhara Fish Curry
Singhara fish is popularly consumed in Kerala, and there is no better preparation of this fish than with a spicy fish curry. This is one of the traditional dishes originating from the North of the Indian subcontinent, namely India and Pakistan though it varies slightly with the sort of spices used and the method of preparation.
Ingredients:
500g Singhara fish, cleaned and then chopped into suitable pieces, 2 onions (finely chopped), 2 tomatoes (pureed), 2 green chilies (slit), 1 tsp garlic paste, 1 tsp ginger paste, 1 tsp turmeric powder, 1 tsp cumin seeds, 1 tsp coriander powder, 1 tsp garam masala, Salt to taste, Fresh cilantro (for garnish), 2 tbsp oil.
Method:
- Marinate the fish with turmeric, red chili powder, salt, and lemon juice.
- They are required to arrive and be set aside for 20 minutes.
- Use oil to fry in a pan for shallow frying.
- In case you opted for gram flour or rice flour, apply this to the marinated fish fillets.
- Deep fry the fish well turning on both sides until golden brown and crispy.
- It is best eaten hot accompanied by chutney or lemon juice.
2. Fried Singhara Fish
Another easy but equally yummy preparation is Singhara fish fry, which is a staple of street food in a good many parts of South Asia. The fish is spiced and seasoned, coated with flour, and fried to crisp.
Ingredients:
500g Singhara fish fillets, 1 tsp turmeric powder, 1 tsp red chili powder, 1 tsp salt, 1 tsp lemon juice, ½ cup gram flour (besan)/ rice flour, oil for frying.
Method:
- Coat the fish with this mixture of turmeric, red chili powder, salt, and lemon juice.
- Devote for twenty minutes only.
- In shallow frying heat oil in a pan.
- Apply a thin layer of gram flour over the fish which are marinated for frying.
- The fish should be cooked in hot oil so that they turn golden brown.
- It is best served hot or you can accompany it with some chutney or a dash of lemon juice.
