1. Halibut and Potatoes Barbecued With Lemon and Herbs
This is a very simple fish recipe that is put together in no time though has a rich taste, ideal for a summer barbecue. All the ingredients used in preparations of this fish add to the taste of fish but the lemon and herbs do not overshadow the fish.
Ingredients:
4 halibut fillets (6 oz each), 2 tablespoons olive oil, juice of 1 lemon, 2 garlic cloves, minced, 1 tablespoon fresh rosemary, chiffonade, butter – 4 tablespoons, fresh thyme – 1 tablespoon, chopped, salt and pepper to taste, lemon wedges for serving.
Instructions:
- Turn your grill on to medium-high heat.
- In a small bowl combine the olive oil, lemon juice, garlic, rosemary, thyme black pepper and salt each.
- To this, spread the herb mixture onto the halibut fillets.
- Probably it will take 4-5 minutes per side until the fish turns opaque and easily breaks into flakes.
- Excellent when served with lemon slices to allow the guests to give it a good squeeze before eating.
2. Halibut Baked with Garlic Butter

Ingredients:
4 halibut fillets (6 oz each), 4 tablespoons unsalted butter melted, 4 garlic cloves, minced, 2 tablespoons fresh parsley, chopped, 1 tablespoon lemon juice, salt and pepper to taste.
Instructions:
- First of all, heat your oven to a temperature of 200 degrees C or 400 degrees F.
- Put the halibut fillets into an oven-proof dish.
- In a small bowl mix melted butter, garlic, parsley, and lemon juice. Season with salt and pepper.
- Bake the mixture for 5–7 minutes and then spoon the minced garlic butter over the halibut fillets.

Ingredients:
4 halibut fillets (6 oz each), 2 tablespoons olive oil, 1 shallot, finely chopped, 1/2 cup dry white vinegar, 1/4 cup chicken or fish broth, 2 tablespoons unsalted butter, 1 tablespoon fresh dill, salt and pepper to taste.
Instructions:
- To this, pour olive oil into a big pan and heat it at medium heat.
- Rang the halibut fillets with salt and pepper. Cook the fillets to golden and crispy by burning them under the grill for 3- 4 minutes on each side.
- Now place the fish aside, and keep it in another tray or plate.
- While still on the skillet, add the shallot and stir until they turn somewhat soft.
- Sautéed onions and garlic, then pour white vinegar and broth and simmer for several minutes or until the liquid is halved.
- Lastly, add the butter and dill to the mixture in the skillet and add the halibut back onto the skillet. This should be done for two minutes to allow the food to get heated up.
- Finally put the prepared white vinegar sauce on the halibut and serve.

Halibut on its own makes for a light and more summery dish well served with roasted vegetables, green salads, or quinoa citrus salad. If you require a more filling dish, which might help if you’re feeling under the weather, then mashed potatoes, rice pilaf, or creamy polenta is recommended.
